ASH RIND WHITE
Our Ash Rind White is made by hand and takes a little longer to mature than the stabilised supermarket variety of white mould cheese.
It has a white, wrinkly surface with a thin layer of black vegetable ash sitting beneath. The ash helps to soften the cheese during ripening and adds to the aesthetic.
The middle section is chalky and slowly softens from the outside inwards. The flavours are milky rich and lactic at the beginning then buttery with mushroom and mild savoury notes as it softens.

Best Served At
Serve at room temperature to allow the cheese’s full flavour, aroma and texture to bloom. Remove the cheese from the fridge, place on the platter or board, then cover with a clean damp cloth an hour before serving.

After it’s been opened, re-wrap with baking or waxed paper and then place in an airtight container to prevent cross-contamination and drying out.
